The Dinner Bell
I know many of you are looking forward to warmer days..and nights. Spring really is just around the corner even though it feels like this cold winter will never end.
But, before these cold days are a faded memory I want to share my Corn Chowder Soup recipe with you. There will be a few more cold evenings in which this soup will put a warm smile on you face.
Corn Chowder
1 lb of sausage
1 small onion chopped
3 stalks of celery chopped
4 medium potatoes diced
3 carrots diced
1 can of lime and cilantro diced tomatos
2 cans of cream of celery soup
3 cups of water
2 small bags of kernel corn
In a large pot cook sausage. Add onions, carrots and celery. Saute with meat for 5 minutes. Add tomatos, soup and water. Stir until blended. Add potatos and bring to a boil. Lower temp to low and simmer until potatoes are done. Add corn and bring back to a boil. Remove from heat, add pepper and salt to taste and let stand 5 mins before serving.
I've accompanied this soup with a nice homemade rosemary bread.

Oh my goodness! That looks so good! We are soup lovers here. I have never had corn chowder with any kind of meat, so I must try this. I adore sausage anyway, so I'm sure this will be so delicious! Thanks for sharing!
